on the table. Together we will prepare Strawberry Onion Salad with Poppy Seed Dressing, Spinach Floret Salad, Hawaiian Cole
Slaw, Honey Mustard Chicken, Quick and Easy Alfredo Sauce with Pasta, Incredible Main Dish Beer Cheese Soup, Herbed Pull-Aparts,
and “Hitch and Go” Turkey Joes.

Preserving
the Harvest: Pickles, $50.00, Participation Friday, September 10 from
10:30am-1:30pm, Stillwater, Minnesota As the last frost comes closer, it’s time to think about ways to preserve the harvest from the garden
– whether from your own or from the abundant produce at the local farmers’ market. Pickling almost anything is
easy once you master the basic principles. In this fundamental pickling class John Michael will teach us all the techniques
necessary to create pickles both usual and unexpected, including Pickled Onions for relish trays or cocktails, Pickled Jalapeno
Peppers, Zucchini Relish, Corn Relish, and Pickled Green Beans with Dill.

Preserving the Harvest: Tomatoes, $50.00, Participation
Friday, September 17 from 10:30am-1:30pm,
Stillwater, Minnesota Canning tomatoes allow them to be enjoyed as a fresh reminder of summer even in the dead of winter. Having
grown up on a farm in North Dakota, John Michael spent many hours in his family kitchen as preserves were made. Tonight he
will share his favorite methods and recipes for preserving tomatoes. We will learn to preserve Roma tomatoes for future sauces
and stews, along with Chunky Homemade Garden Salsa, Barbecue Sauce (with several options for seasoning), Authentic Italian
Pasta Sauce, and fantastic Catsup.

The Flavors of Tuscany, $60.00, Participation Wednesday, September 22 from 6:00pm-9:00pm, Stillwater, Minnesota
Imagine the rolling hills of Chianti, the orderly fields and Etruscan walls, the terraces of
olives groves near Cortona. Chef John Michael Lerma escorts groups of travelers every fall to this enchanted land to showcase
the food and wine. If you can’t join him in Italy, join him at The Chef’s Gallery to celebrate this favorite cuisine.
We will learn to prepare Focaccia (flat baked bread) topped with a variety of flavors, Fresh Sage Omelet, Hearty Farro Soup,
homemade Ribbon Pasta with Duck Sauce, a High-Summer Risotto, and the Italian version of trifle, Zuppa Inglese. Wine will
be served with our buffet.
