Our cooking program
is "All Inclusive" which includes seven night's accommodation at Il Rifugio, cooking classes (including
guest chefs), special excursions (that include lunch and supper), and all meals and house wine with the exception of
leisure time. Air fare is not included in our "All Inclusive" package. Cooking classes are limited to eight participants.
The classes are small enough to accommodate cooks of all levels and ideal for small groups of family and friends. |

market availability - Antipasti (Antipasto means "before the meal"): Bruschetta con pomodoro (Bruschetta with Tomato),
Prosciutto con fichi (Prosciutto with figs).
- Zuppa (Soup): Creama di pomodori al basilico (Tomato and Fresh Basil Soup), Ribollita (Tuscan Twice-Cooked
Soup).
- Pasta & Sauces: Egg pasta, Sugo di pomodoro alla napoletana (Basic Tomato Sauce), Pesto Sauce,
Cannelloni Ripieni (Cannelloni), Lasagne al forno (Baked Lasagne with Meat Sauce).
- Rice, Pizza, &
Vegetables: Grilled Vegetables with Basil Vinaigrette, Pizza quattro stagioni (Four Seasons Pizza), Pizza con cipolle
e tonno (Pizza with Onions and Tuna).
- Poultry, Meat, & Seafood: Pollo alla cacciatora
(Hunter's Chicken), Arista Al Ramerino (Roast Pork Loin with Rosemary).
- Desserts: Torta di mele (Apple Cake), Zabaglione, Tiramisu,
Costata di marmellata di frutta (Jam Tart) and many more recipes!!

You will be met
at the Camucia-Cortona train station or in Cortona by an English speaking driver who will transport you to Il Rifugio. After
a tour and orientation, you will settle into your room before a welcoming dinner. All transportation is provided during your
stay at Il Rifugio including traveling to the surrounding communities and errand requirements.
